Would I get accepted for AP for a 30day exploring Europe and learning about history? Or am I just dreaming too much? It's not for college credit but man it would be so cool.

I would signup for an actual study abroad program to get some "proof" and you can always go off on your own.

With your description, no, you do not qualify. However, if you find a volunteer program that could benefit you at your current job/enhance your job skills, it could possibly work out. Two things, you would be limited to visiting one country only where the program is and two, you would need letters from your job proving that you work there and are asked to participate in this volunteer program.

I kind of have the same question.
What if I register to a language program in a foreign university? Obviously, this would not count towards my degree because I already graduated. Would having proof of acceptance to this program count as evidence under the educational criteria to apply?

I got approved for a 2 week study tour in Europe. Its not for credit but it was sponsored by my school.

I would think so. Try to get in touch with the school to see if they can send you a more personal letter as well.
