Everyone keeps talking about a pardon, but other than protecting us from deportation, what would that actually do? Would we be able to keep our work permits/continue renewing? Could DACA still be revoked after a pardon?

Nobody knows because it's never happened before. So we don't really have an answer to your question.

I've been wondering the same. Say the pardon happens, we don't get deported but we can't work? Would that open a path to being a permanent resident?

It merely forgives our EWI and overstay. It doesn't have the power to create work permit/create legal status.

If it forgives the overstay / 10 year ban, in my case, with an approved/current date on my family sponsored (tier 1) visa, I'd be able to return to country of origin and come back with a green card.

While it'll definitely benefit many Dreamers, it won't help all of them. Pardon will clear any illegal overstay record off the book, which means you can then legally apply for a visa if you qualify for one.
More than likely the DACA will be terminated and EAD associated with it will also be removed if such pardon was given.
It sounds more and more like what Trump should do if he is indeed revoking DACA and want all illegals to re-enter the country with legal status.
