Most likely not. I believe US consulate views Hong Kong and mainland China as 2 different countries.

That’s not bad..My husband had his biometrics done in May, and we’re still waiting. On the USCIS website, it shows current case processing times for 601A receipt date as November 2018.

Me. Although my I130 was filed by my parents, not a spouse. That's the easiest part of the process though.

Im about to submit all the paperworks with 601A (By Monday hopefully),
Then my understanding is that I will wait until uscis either approves it or asks for more evidence, hopefully not denial. I seems the wait period for that will be 9-13 months as of now. DS260 is filed only once one hears back from uscis corrrect?

Question, if you didn't have DACA, would you have been able to file I-130 and a I-765 for employment authorization at the same time?

No, only visa overstay can apply for EAD. If you are EWI, you can't get apply for EAD.

Yup, still waiting for my DS-260 to be approved. NVC wanted more documentation, they were asking for my proof of citizenship, have to remind them that I'm the applicants, not the petitioner.
