I did consular process in Ciudad Juarez and this is my experience:
I took 3 years of tax transcripts (for myself, husband, and co-sponsor if applicable), they only asked me for the most recent one...

Definitely contact NVC, I believe the only bad thing about rescheduling is that you have to do the wait for a date all over again, one year for appointments at Juarez, but it may not be a long wait...

My whole process took about three years from I130 to Interview in Juarez. I did need a 601a, this is how long each step took me:

I130- 11 months
601a- 9 months
NVC Document acceptance- 3 months...

It took about 9 months for me to get a notice of approval for 601a. I did not receive any notices between the fingerprint appointment and the approval notice. As long as you don't get an RFE I think...

You may think it's irrelevant but having DACA shows you had legal means of working in the USA and less likely to be a public charge, my husband made enough to sponsor me but we do our taxes together...

Renewal sent 5/11/19
Biometrics 6/7/19
Card being produced 6/27/19

I was set to expire 9/22/19

Sounds about right, took almost a year for my I 130 to be approved after fringerprints and 9 months for 601a to be approved after fingerprints

My waiver was approved within 10 months but I have heard others say it took more than a year. I was approved first time and did not have to send additional paperwork.

It is along process, my waiver was approved november 2018, interview paperwork sent december 2018. Still waiting on appointment date to be set.

I expire end of September 2019 and I am getting ready to send renewal. I noticed the forms on the USCIS website expired 1/31/19. Has anyone had an issue renewing with those forms after they expired?
