You cover the tortilla in the sauce and then put it in the hot pan. add the cheese and onion and make a roll while cooking. You top enchiladas like tostadas, with lettuce, cooked diced potatoes and carrots, mild sauce, hot sauce, fresh cheese and sour cream. It is an heart attack waiting to happen but that is the way we eat them.
