AP flexibility in date of travel

Hello All,
I want to apply for Advance Parole since I just file DS-260 and getting civil documents now, then get in line for consular interview, but have no idea how long that could take ( this would be for EB2 immigrant visa). It seems in Guatemala, my birth country it is taking 1-2 years for interviews f0r family based petitions.
I wonder if there is anyway I can fill out the advance parole application where the date for the trip is more flexible or perhaps for multiple entries. Is there any possibility for that? The way that application is (I-131) it requires you to enter a date of planned departure and return. @Demise or does anyone have any suggestions ?

The maximum allowable time for AP is a year for multiple entries
