It depends on your major. Science and Engineering graduates are welcome everywhere, liberal art graduates are not.

You may have a little problem then, since they don't take your associate degree as a valid form of college education. They also don't take your high school diploma, meaning you are not even considered a high school graduate. If you graduated the middle school in the US, then the problem gets worse and you are legally not even a middle school graduate. Only US bachelors and above are considered to be equivalent and legally acceptable.

You must finish at least a bachelor's degree or you are screwed for life.

Not necessarily true.

it's possible to transfer to a Korean university but in some universities, you might have to start as a freshman bc they might not accept any of your college credits. Transferring to a Korean university is very complex and the requirement varies from schools to school. Ex) Yonsei Univ. only admit transfer students from a accredited 4yr university. And they ask you to submit many documents/transcripts as academic proofs.

in some cases, you might get accepted with 외국인 특기자 전형

any of these will work?
As I have experienced returning back, the US Airport do not check the I-94. It is the Korean Airport that checks the I-94 that sends back the information to the US. So, even if you sneak to other country and then return to Korea, you will still have 10 year ban since your record is shared with the US and Korean government.

Any decent university do not take transfers. But even to attempt a transfer, you must first have a high school diploma or local GED which you do not have(They don't take American high school diploma.)

The rule of thumb for Asians is that they must first have at least a US bachelor's degree. Then they could apply for local graduate schools and continue their education. But anything less than a bachelor's is a serious problem because they are not locally accepted.

East Asian countries do not take US K-12 education because their K-12 standard is much tougher than the US K-12 standard.

That doesn't apply to you as a returnee since you are a citizen. Only foreign nationals may qualify. Might as well become a citizen of some South American country before returning to your home country. Oh well, they won't let you in with a South American citizenship. Forget it.
