That would be a decision you would have to rationalize with yourself,but if it is the only evidence you have that can prove the continuous 5 years then include it.

Not a good idea if you used a SSN that is not yours. Instead, use your tax returns (if filed with your ITIN). Remember, working with a SSN that is not yours or fake is fraud, and you do not want to show that (even though they are aware the majority of us have done so).

My sister applied to TPS and she sent pay stubs, and she was not legal, and they didn't reject the application. Just saying, not sure if that has changed, but how come they ask for employment records if they already know we are illegals. I think they don't care, SSAd is a separate agency

Depending on your case. Some had valid SSN and able to work legally and obtained legit employment records before having their visa expired.

Will a copy of a check dated be enough, I have the paystubs but it includes a fake SSN
on it.
