Cant sue. But they can press charges for theft which u dont want on ur record.

Anyone can sue anyone for anything. Doesn't mean they have a case.

Depending on the amount of cash "stolen" they might Press charges or they could just fire you.

No they can't do nothing to you, I know this since my family own business. Only thing they can do is report to cops to have it on your record and take same amount cut it out of your pay check. If your working under table then I would sugest you to quit that job untill you get your EAD just play safe until then.

500+ = grand larceny

They can sue but it'll cost more then what they'll get back. Most likely they'll call the cops. Then again if it wasn't a lot I doubt they will in order to to prevent attention.

I don't think they'll call cops since they hire an illegal, So they can get in trouble as well. Also keep this in mind if they do call cops then just tell them you didn't still anything and your boss blackmailing you since you don't have paper, also add that your boss didn't even pay you many times. Then ask for copy of police report and apply for U-Visa which will get you greencard eventually.
