Wait 20 months and when you renew send only one last name.

Does anyone know the procedure for having your name changed officially? Do you have to do it through your country of birth and then update it here?

Depends on your country. It's easier to do it through a probate court in your state. I explained it in my previous post on the second page of this thread.

And yes I can wait 20 months but I'm not sticking with two last names when I could pay $100+ to fix it.

But would it be recognized by your country of birth (the one that issued your birth certificate) if you do it here, while not holding legal status?

No. I'm from a country in SA where it is impossible to drop your maternal last name. I assume this is also the same process in other South American countries. Even if I were to somehow start, the process takes about 2 years and it isn't a guarantee your request will be granted.

I would follow the steps I outlined in my previous post. Although it most likely will not be recognized in your home country, it doesn't need to be.

So it's okay for your passport/birth certificate not to match your state ID/social/EAD?

I want to drop my second last name too. I would guess its not a problem if it doesn't match, you're not changing your name, just dropping the second last name.

Yes.

I am only going through a probate court for a legal name change since I was advised to write my name on the application as it appears on my passport. After calling USCIS, I wrote a letter to the processing center explaining the name change although I still haven't heard back.

Next option (besides changing your name when you receive your GC) is to go through the court. In my state you need (2) forms of identification such as a driver's license and/or SS card.

Either way if you were to become an USC or PR, your GC or American Passport will never match the one from your country that is unless you decide to keep both paternal and maternal last names.

I guess I can post this here.
I went to get my biometrics done yesterday and the form they ask you to fill out asked for my last name. I only put my paternal last name in hopes of dropping my second last name. However, in the "other names" section, I did put my maternal last name.

So when I went up to the lady to check my form, she actually filled in the maternal name where I had purposely left it out.

Oh well.
