I can't recommend anything other than a STEM field, except for Accounting and maybe Finance.

And even some fields within STEM don't have such great prospects.

Nevertheless, it is up to you the individual to open up opportunities no matter what career you pursue.

I plan on pursuing Engineering while on the side trying to break into voice acting. The voice acting might work out or it might not work out. If not, hopefully the Engineering will be a good fallback plan.

Dental Technologist is also good, but you have to go to one of those schools that advertise during Jerry Springer.

I am finding a lot of demand in the data analysis and management area, far more than people out there actually in that field.

My degree was in engineering, but I have been unable to use it due to most employers in my area requiring functional experience and not being able to get that. I have however, been able to get more trained on data, which can be an easily self-taught profession, and I am getting requests from all over the country to apply for different positions in admin. or managerial type of work, and several interviews just in the last week.

The most accessible is programming. All you need is a computer and you can learn from websites and books. Join an open source project in something that interests you so you can build up your experience and portfolio then you'll be able to easily get a good job. The truth is not many students come out of college with project experience so contributing to an open source project will give you a huge leg up. If you find a relatively small project, you'll meet a lot of cool people that will want to help you out if you prove that you really care about the project.

Another good job is FPGA design, get yourself a Zedboard and the Xilinx webkit then you'll have a rare in demand skill. Learning curve is a lot harder though since it doesn't have that big of a community as programming and requires a good understanding of embedded systems.
