Who here has successfully removed the 2-year condition from their green card and received the full permanent residency?

I filed for mine, but still haven't gotten it removed. Apparently they are so backed up on ROC, that filing for citizenship pushes them to do both ROC and naturalization interviews together.

Is the ROC interview optional or is it now mandatory for all cases ?

Per the USCIS's ROC page, the interview is still optional:

I need to renew my EAD and AP combo because it is expiring soon. Although the filing is free, we want to use a lawyer to do it just to avoid the headache and be 100% sure it's done right.

Should I submit my renewal asap OR wait a bit and hope I get an interview and then submit the renewal if the interview doesn't come in a few weeks. My EAD is set to expire in 2 months and I believe I get a 3 month extension after that.

Renew it while you are still waiting.

Wow, that is insane, but sounds about right. It is insane if ROC is taking more than a year to do.

Only thing you can do is wait for the notice, or call an immigration officer at USCIS to find out what the notice says.

According to this page the ROC process is currently taking 18 to 20.5 months. I got my extension letter and it's for 18 months instead of the usual 12. At this point i'm eligible to apply for citizenship starting in May 2019, but the ROC won't be until beginning of 2020.
