I wonder if all my tickets for no DL and insurance(s) will affect me getting a license.

Also hope I don't run into any problems when showing residence with my ead and passport having
my surname and my documents only my last name I go by.

You won't. I have 2 last names on my EAD and SSC and I showed documents with my primary last name.

Okay so...

It seems to be pretty hard to find information for adults that are over 25 in Texas and have no experience.

It looks like I can go in, take the written and vision test, and then get a B-restricted driver's license. I can use that to practice with and then come back, take the road test, and get restrictions removed, correct?

No. They give it at the end of the course. All you need is your certificate to prove that and you're good.

I don't think so. As long as you take the road test and pass, you should get the unrestricted license.
