You go to the SSA with your work permit and tell them you want to update your status and they will mail you a new card with the different wording on it. Your SSN never changes, it stays with you forever. Only in rare circumstances like when you would need to change your identity.

Is the SSA office even open now? Is it possible to update the status online?

No, they're not open but they do offer help over the phone. That being said likely the only option left would be to submit SS-5 form over mail, include your original EAD and probably passport too, these should be returned to you later.

Another option (DACA and other groups with EADs) would be to request a social security card to be issued using form I-765 when you file for a renewal.
