If you don't say anything, you're not only gonna get yourself in trouble but also your company. They're employing someone who isn't allowed to work.

You definitely don't want to ruin your chances are adjusting your status in the future.
Talk to your HR and see if they can offer a LOA.

While it is tempting to do that, it is highly risky. I talked to my immigration lawyer who said containing to work while EAD is expired could trigger your deportation. Also, like someone stated before, it would cause problems when trying to adjust your status and I'm sure your job will not be happy with you if they find out you knew. It's just not worth it man. I know we all need to work but the consequences far outweigh the benefits.

I don't think there is a risk. The USCIS has no way of figuring out short lapses in EAD and employment and make those connections.

I was approved today, yes.

I kept seeing my expiration day looming, and just reading what everyone was posting, I was hoping that were I not to get approved before I expire, at least I'd get approved within the same week I expired, and lo and behold, that's what happened.

I really, really hope USCIS gets their shit together now. None of us should have to wait until after we expire to get an approval, especially if most of us have followed the recommended submittal guideline. I hope less and less of these delays happen. I'd hate to see even more people go through what we all have gone through!

As for adjusting your status, you have to provide your information on what you've done with your employment, and off employment. It's risky.

As much as we are upset or mad at USCIS, we can't go against them either. I have faced the officers when I went on AP. They will try to crack you and they will find out when you weren't allowed to work. Don't mess up those chances.

https://egov.uscis.gov/casestatus/mycasestatus.do.

and it says the following "On October 13, 2016, we began producing your new card for your Form I-765, Application for Employment Authorization"
Thank God for this i was so worried Now i just have to wait to get it in the mail.

Timeline:
Application Received 6/20
Biometrics 7/15
Card Production 10/14
Approval?? I guess same as Card production because Form I-821D hasn't been approved yet on the website

You are not obligated to tell your employer that your EAD expired.
From NILC

If your EAD has expired and you have not yet received a new EAD, you are not obligated to go tell your employer that this has happened, but you will be at risk of being fired when your employer realizes that your EAD has expired.
