My tags expired at the end of March but I renewed online 3 weeks before and I haven't gotten the sticker in the mail yet.

My question is, is it legal to drive with an "expired" sticker even though you have already paid for it and just waiting for it in the mail?

Do cops actually check your plate on the computer before pulling you over?

You can and most likely will get pulled over if you're driving around with an expired sticker. That's so stupid that they don't overnight ship the sticker or something.

You'll be fine as long as you have a license. If you get pulled over just show them your receipt that you paid for it. If you don't have a license then don't drive because you're just asking to get pulled over.
