I got my Biometric letter today and it seems like they ran out of space to spell my maternal last name (3 names + 2 last names doesn't help). But in the 2 letters that I received prior to the Biometrics they are all correct. Is it really an issue or should I just forget about it.

Just ask them when you go in for your biometrics, they'll tell you whether it needs to be resolved or not.

Its all good. They just ran out of space. They have all your info anyway.

When you go for the appointment they'll show you a screen with your demographics measure they are correct since that is what's going to appear on your ead.

So can you "pick" the name you want to appear on the EAD? I have two last names and I put my maternal last name because that's how it appeared on my passport. I called the customer service line after receiving my biometrics and was told to write a letter to the processing center. Still waiting to hear back...

Writing a letter to the processing center? But in what kind of format, do you know? And would they even be able to link your letter to your application?

About the bolded.... Basically. In "Item #1" with your name, just put the name you want to go by. As long as your official documents can prove your name... you are fine.

I had all four names on my passport (my official surname is different), but I went with the three names that I went by and explained it on my app. I used that name consistently through out everything.

Everything from USCIS has had my three names on it.

The whole name is issue was discussed when dreamers started to fill their application. It was discussed that it was ok to only put your first, middle and paternal last name at the beginning of your app then under names used put your complete full name. Some people were arrogant and didnt care so they put down their whole entire name. but yes if you are sending and app you can put down Juan Jose Gomez instead of Juan Jose Gomez Martinez. So Juan J. Gomez will show on your EAD and not Juan Jose Gomez Martinez

I had my receipt numbers and alien number for their reference. If I don't hear back next week, I'll call the customer service number again.

I wouldn't classify myself as arrogant. Both of my names appeared on my passport and that's how I thought it should appear. Of course, I'm having regrets and working towards resolving the issue.
