Just got my drivers license today it expires 2018 and my work permit 2016 would they change it or would it stay like that

They will change it 100% sure. You replacement should arrive within the year..

Does your license expire when your EAD expires? I know it has a temporary written on it but then it also has the date where the actual license expires. So would you get in trouble for driving with expired temp license while the renewal of your EAD is pending?

CA licenses don't have "temporary" written on them.
