What countries are you guys considering in the event of departure?

Obviously, we'll have to go through the legal channels first.

For me, it's Canada even though it's not easy and requires proficiency in French to stand out. Also, some Canadian immigration officers won't be too fond with illegal presence in the US so that might be an obstacle.

There's also Spain even though their economy is not in top shape right now or Uruguay.

That's not a good choice unless you have a high salary and can afford living in the rich neighborhoods. You'll also need to find a high paying job which require fluent spanish there.
