My guess here is that they only care about American addresses/residences you've lived in.

I've also left to Mexico for one day to renew a visa and went to China for a brief 3 week trip during high school. They are considered brief and absences. Should I provide some an explanation about my day trip to Mexico? It says on one of my visas that I came into the US in 2007 (the year that I went to Mexico), so it might seem like I entered in 2007 vs 2006.

When in 2007 does it say you entered the US, Did you have legal status during that period?
If it was before June 15, 2007 AND you were under 16 on that date, that still makes it 5 years of continuous residence, so the fact that you originally came in 2006 doesn't even matter. Either way, a brief explanation is enough.
Same with the trip to Mexico/China. IF it was before the 5 years of continuous residence, and/or while you had lawful status, you'll be fine. I believe they only really care about absences if it was when the person was out of status (aka, illegally, expired, etc) and within the 5 years period.
