I'm sorry to say, but your lawyer might be misleading you. I have renewed both my DACA and AOS EADs without issue. I think it's important to maintain DACA status in cause your AOS case gets logjammed

I would recommend printing it on a 8*11 and including it with the application. Placing the letter in a separately sealed envelope is more likely to cause confusion of the adjudicator on your case....

Just find a volunteer organization and get an email/acceptance letter for volunteering with them with the letter head of the organization. Also, provide a brochure or printout from their website...
